Okay, I've decided to pretty much just do an IPA. A man's gotta have hops, yo. I'm hoping for a fruit salad of esters and hop flavors, plus a pretty nice hop aroma.


Batch size: 5.5 gallons
Efficiency: 74%
OG: 1.064
FG: 1.013
ABV: 6.7%
IBU: 49.9
Color: 6.4 SRM

Fermentables:
9 lbs Pale Malt, Golden Promise (69.2%)
3 lbs Vienna malt (23.1%)
12 oz Honey malt (5.8%)
4 oz Flaked wheat (1.9%)

Hops:
.25 oz El Dorado FWH (11.6 IBU)
.5 oz Calypso @ 10 min (6.6 IBU)
.5 oz El Dorado @ 10 min (7.7 IBU)
1 oz Calypso @ flameout/20 min (11.1 IBU)
1 oz El Dorado @ flameout/20 min (12.8 IBU)
3 oz Calypso dry hop, 3 days
3 oz El Dorado dry hop, 3 days

Yeast: Frankenyeast, make starter

Mash @ 150 F
Ferment @ 65 F

That's a pretty heavy hand with Honey, i'd drop it down a bit personally, but it could be fine.

I've done 12 ounces in the same size batch before and liked it. And that batch had some C malt, too. I feel like 5%-6% isn't bad (for my tastes).
