So I am going to slam a batch out next weekend I think to have a nice pale-ale on tap for the holidays (we host xmas eve). Last year I brewed a 5.5% Pale Ale Citramarillo, which was a hit and disappeared in the week between xmas and new year. Given my current hop inventory, I am thinking of trying someting with a bunch of hops I have never used - all these southern hemisphere varieties.

Anyone know how Galaxy, Rakau, and Calypso will work together? Will ferment with 090, thinking grainbill somewhat similar to my IPAs: 2 row (or maybe pils) + 20% Vienna, 4% Honey Malt.Want something drinkable, clean, fruity. shooting for that 5.3-5-6%abv kind of beer. will be fast turnaround, probably brew this weekend once I get my Pils kegged.

Call it "Southern Summer Pale Ale".

Thoughts on those hop combinations? Malt bill concerns? Current hop inventory:

Galaxy and rabbit turds would probably taste amazing together, I'm sure a 60/20/20 blend will be great. I fucking love Galaxy.

I'm not a calypso fan. comes across as the harsh/sour/bitter part of a passionfruit. It's not bad, I guess, just not fruity in the same way as galaxy or some of the other southern hops.

My springtime pale ale is going to be all galaxy. I'm with marshall, that hop would taste good no matter what.

OK, Galaxy/rakau it is. Calypso I guess is american anyway. So it doesn't fit the theme.
