Pretty sure I've read about that on braukaiser, it pretty much convinced me that I can't duplicate that exact process on the homebrew scale.

The reason I ask is that I expect the yeasts to take off at different rates, in the same chamber. I'm looking for a good setting where I can set the probe for ambient rather than precisely controlling only one of the fermentors and then wait for diacetyl rest time. I will need to set it quite a bit below 10C to get the actual fermentation up around 10-12C.
