You could give wlp007 a chance. Rumor has it that it's stones house yeast and I use it as my house yeast. It may not be a conventional ipa choice ala 001 or 090, but I enjoy working with it. It attenuates pretty well and I find it to be pleasantly clean without being as plain as something like 001. Plus it flocculates really well (not quite as chunky as 002, but it still drops very clear).

I like 007; if I go with a clean strain, it would be a good choice.

Go clean, or try to add a little fruitiness? Hmmm...

Split the batch and blend? Or just blend the two yeasts together?

Wlp090 is great, but if you think it's somehow less "boring" than 001, I think you're mistaken. I'm not convinced most would notice a difference between the two, aside from the quicker performance and better flocculation of 090.

007 is the ipa yeast to go to if you want a bit of ester character.

I'm with Ray in thinking 090 and 001 are probably more similar than they are disparate, which is something I never thought I'd actually believe...

I like WLP001 for its boringness in an IPA. I would rather taste the hops, but that may just be me.

Woo hoo! I don't think you'll be dissapointed. It's my favorite go to. I actually fermented Ray's MACC recipe woth it and was very happy with the results

How would you rate the esters, flapjackcarl? What temps do you ferment at?

WLP007 has moderate apple/pear esters, less than 002, bit still noticeably English. Ferment cool to lower the ester expression.

I've made MACC with 007 a couple times too. 007 was my "house ale yeast" for a while... great performance, great flocculation, fairly clean but with some character. I switched to mostly 090 because I like the flexibility of clean American Ale Strains. Use US-05 quite a bit when feeling lazy too.

The challenge I've found w/ 007 is that if you have a sudden temp drop for some reason it'll floc out early and leave a bunch of diacetyl, though that's true of many English strains in general.

Well, don't do that. Temp should only go one direction during active fermentation: UP.
