So, I'm going to do a hoppy beer (likely an IPA) with this Frankenyeast. I've decided that I want to heavily feature El Dorado and it's candy-like fruit aroma.

I'd love some suggestions on another hop that will play nicely with it. I love the way Motueka pairs with it, but I'd rather go in another direction.

I have Galaxy, Amarillo, and Mosaic on hand. I'm sure that they would work nicely, but I'm wanting to maybe try a new hop. I'd like to go with something really fruity, but not necessarily citrus.

Am I nuts?

Ever since someone mentioned Mosaic being 'berry-like' thats all i can fucking taste from it in my beers. Ive said before that i think my palette is shit, though.

And frankly, its hard to taste much through all the dark crystal in this BrewDog clone.

Still though, seems plausible.


On a 'im going to hijack this thread with late night semi-intoxicated thoughts' note, i uh...discovered...some hops in my freezer that i had forgotten i bought. I remembred the Citra and Comet (because i laughed with my pothead friend about how its supposed to smell like weed), but had completely forgotten i ordered Simcoe and Amarillo for the first time... I should brew something with those the weekend after next. I doubt my carboys are going to be ready for a new batch this weekend. I need moar better bottles.

Meh. I get way more resin from Mosaic than anything else.

I just think its not my type of hop in general.

I actually have really come to enjoy my grapefruit in IPAs.

Even pure Citra doesnt excite me. I just pick that up as being too....for lack of a better way of describing it, 'sweet'. Cascade especially adds a really defined bitterness, imo.

Though maybe ive just used more Cascade in my beers...

*shrug* I guess im trying to say that a lot of the newer hops actually havent excited me, and ive had issues making NS/Motueka work properly since the first beer i made with them (kiwi express IPA from NB)

Nelson Suavin is one I'm really thinking about.

I love Citra, but I dunno, it seems like it's in everything these days.

Im starting to think for my taste buds that Citra as well as many other of the 'new wave' hops need to be paired with some of the more traditional ones.

But again, that might just be me preferring a crisp grapefruit 'bitterness' (or tanginess, perhaps?) to the 'sweetness' i perceive from hops like Citra.

Hopefully this summer ill have a chance to test more hops.

Come to think of it....Oooooooooooooh. I could do a split batch pale ale. Bitter to the same IBU, and then get most of my flavor from whirlpool additions, which would allow me to split the batch post boil. That'd be a fun way to test some hops. Yay for 10 gal batches! Now i just need to start drinking more again so i can do more experiments....

Calypso is also on my short list. It's seems like a little bit of an oddball hop.

That's why this one is on the short list for sure. I think that apple/pear would play great with El Dorado.

Completely different, use Smaragd and Saphir as a broad base and also bittering and top it of with El Dorado

That's another interesting idea; Saphir is definitely on my list of hops to try. But I think that I am going to go El Dorado/Calypso.

Went to the LHBS today with the intent of going with El Dorado and Calypso. He had less than two ounces of Calypso on hand. Crud.

Checked for Azacca next... less than one ounce. Double crud.

He suggested that i go with AU Summer, which I had never considered. Hmmm... aroma hop. Fruity, apricot, melon... sounds great!

Since it's fairly low in AA, I picked up an extra ounce of El Dorado. And an extra of the AU Summer, because why not.

Ahem. This is not a "hoppy beer", this is a legit IPA, what with my twelve ounces of hops earmarked for it now...
