Wheat has indeed always been the favourite for brewing but not always accessible. So yes, if it becomes available in these amount they will certainly have used it.
Are there still descendants of these yeasts from that time available in the US? That would be very interesting as there are only very few real German Weizen strains and they are closely related. These yeasts where for the largest part of time only used in Bavaria. Also 1860 is still pre Pasteur.

@ingoogni - there are no strains available publicly. I wouldn't be a bit surprised if they existed in AB's or BSI's vaults though. Wheat beer was kind of dying out anyway by Prohibition hit, with the odd exception of Berliner Weiss. That was still popular in certain pockets of the country and being made right up till Prohibition.

I almost forgot ... either @homebrewdad or @vinpaysdoc ... which malt are you talking about; Farm Boy or Riverbend? You can get Riverbend shipped to you from ABS. I'm not sure if they're carrying their 2-row yet, but they have their 6-row and their rye. I've yet to find Farm Boy available.

I wanted to say super horrible things about bottling, but i dont want to be a dick.
Seriously everyone. If you can afford to start kegging (get loose handle pin locks when they come on sale to save money), and have room for a keezer...freaking do it. Watch Craigslist for a freezer to save some money, but...seriously....DO IT.
Kegging is awesome. Its incredible how much more i want to brew now that i can keg and dont have to deal with the satanic ritual that is bottling!

I figure I'll already get some sweetness from the corn. It hurts me to only use one type of Crystal, though... I love to layer 'em.
The toasted rye was only for fun and to complicate things, as this beer was just too simple.
