I'm planning a rebrew of my 2014 Reddit Comp Biere De Garde for some summertime drinking (going to the mountains with some friends) and to send out to competition (scored a 31). My goal is to make this a 40 point beer.

I know the ABV is way out of style (over 10% instead of the 8.5% I had been shooting for), so I plan on scaling the base pilsner grain down a few pounds to get closer to what I want. The recipe hid the alcohol though and it wasn't hot or "boozy". It was a definite "sleeper beer".

I know when I submitted the beer I had some carbonation issues, so I'm sure I got knocked points for that. However, when reading the tasting notes again, I got knocked for being "too toasty" and "one dimensional". Is this something I should worry about and address?

I'm thinking I may have rushed the cellaring (didn't give it the full 3 months) and this is why it came out a little flat and one dimensional. Here are my current tweaks, sorry I scaled it from 10G to 5G.



From reading the competition notes, is there anything else that you think I can tweak to push this one up by 10 more points? Thanks!

Chinobrews replied to me on reddit and I'm going to follow his advice of adding a pound of victory and a pound of special roast to the mix
