mchrispen asked for other bittering ingredients than hop for his Pratchett brew, the beers is brewn but I came across a nice book on bitter in cooking.

I'm able to read some of the table of contents in a preview.  Some of this seems about right (cocoa, thistle, etc.) and some seem a little too dangerous (tobacco).  I'm not sure how much flavor some of the stuff in between would contribute like endive or bitter melon.  While it might be an interesting experiment, I'd be afraid something like bitter melon would end up like CCB's Cucumber Saison ... which I thought was more or less like drinking a salad.
