That's a good point. *If* your acid malt is pils, then it would fall under the "pilsner is pilsner" doctrine.

Weyermann acidulated is pils malt, at least I'm 99.9% sure it is. I'm not sure I'll want to use it yet, but I agree Olan, I think pils is pils, even if it's acidic.

For what it's worth, I think a ruling of 'although pils, it's considered a specialty malt so it's a no-go for our competition' is a fair and justified ruling.

Okay, boat rocker.
Weyermann acidulated appears to be pils. Briess, on the other hand, appears to be 6 row. Others... who knows?
So the official ruling is: Acidulated malt is out. Use lactic acid, phosphoric acid, etc.

Okay, for the Munich Malt, it says Light or 10L, does that mean I can use Light AND 10L in a recipe?

Munich malt question:
Here are my options...Chateau Munich Light, Weyermann Type 1 or Type 2. Which one of those would be ok? If none are, that works I'll just go with another vendor.

Seems like any of the three will work David. Not familiar with Chateau, but both of the Weyerman are under 10L

It's tricky spec'ing Munich... basically we wanted to exclude CaraMunich and the like. With so much variation between maltsters - we 'thought' Light and 10L gave a reasonable range.

Thanks for the responses. I've literally never used Munich in a brew I've made before so I have no idea what I'm working with. Weyermann has been the brand I've been going with across the board so far, so I had hoped to stick with that. I'll do so unless I see otherwise somewhere.

Weyermann Munich II (which is ~9L) should be pretty much ideal. If you're already using Weyermann, you should be golden.
