So I have a club competition coming up in March, and our theme is we have to use Forbidden Fruit yeast. 

I know it's meant for belgian witbeers, so I was considering  that. I also was considering a dubbel or tripel. Something that doesn't need much age for obvious reasons.

I'd like something I can enter in other competitions as well, so I think I want to keep it belgian unless somebody has another style or recipe that would place well.

I've been on this kick lately of keeping recipes "Stupid Simple." I was even thinking about naming my home brewing operation "Stupid Simple Brewing" because, for example, if I do a belgian wit, it'l probably be literally like 50% white wheat 50% pils and that's it. But if I'm doing a wit or something, I'd also like to add some restrained spices and  try and make it somewhat unique.

Thoughts? Recommendations?

Calling water wet here, but if you're going for a traditional Belgian recipe, stupid simple is where it's at, anyway.

Restrained spices?  Don't say coriander...

lol I know you hate coriander. I am not a huge fan, myself. I used .75oz (which is often referred to as the standard in 5 gallons), and it was WAY too much. If I used coriander, it's going to be about .25oz this time. 

And I'm curious about other spices, since BJCP also lists cumin, cinnamon, grains of paradise, etc.

Overall, I'd rather focus more on the orange zest than the spices.

ALSO: I thought maybe an IPA or Pale Ale. Something on the hoppy side. What hops would work well with something like that?

Grains of Paradise sound like a winner to me. 

As for hops, are you trying to be traditional, or off the wall?

Cider.  Make a cider with Forbidden Fruit.  You can thank me later.

Also, if you're going to make a Belgian I <3 GoP and chamomile.  Also, keep in mind that real Indian coriander isn't the same coriander you buy in the grocery store.  I find most domestic coriander to have a kind of soapy flavor.  Indian coriander is lovely and citrusy.

Gary, I haven't made a cider yet. What should I use for a base. Just unpasteurized apple juice, or should I really be contacting orchards and the like? 

I do know there's somebody else in my club that's doing a cider. They do cider's all the time, and they have placed at NHC. So I'm not going to contend with that. But I guess I could care less if it turns out awesome anyways.

But it would be really cool to have a sparkling cider to have on tap with my beers! For non-beer drinkers! (Like my wife!)

As far as hops- probably more  traditional. Whatever works though. If there's a niche hop that would pair well, I'm all for it.

Unpasteurized juice is fine.  Really, any juice is fine as long as there's no sorbates.  Just make sure you throw some nutrients at it and pitch properly.  It should finish semi-sweet with a lot of spice character.

Awesome. Good to know. Thank you. I think I am going to go that route.

Maybe I could keep it belgiany and add some orange to it as well? That might be a cool and interesting twist. A "Belgian Cider?" Is that a thing? Did I just make up a thing?

Woodchuck has had a Belgian cider in the past.  Crispen too I think.

Some orange peel wouldn't hurt.  Maybe even a cinnamon stick.  I'd keep it light though until you get a feel for the flavor.

Yes, absolutely I'll keep it simple.

I'm just thinking a cider with this yeast, and adding orange peel and a couple spices. Like just coriander and grains of paradise or something.
