DirectionsThe grain bill matches Boulevard Tank 7, and the hops schedule is close (though they use a different bittering hop.) Increase flavor hops to taste, or do a hop stand if you prefer.

Fermentation

Depends on yeast selection. I used a very aggressive schedule with Belle Saison. Underpitched by using a single packet not rehydrated, pitched at 80F, and after 2 days ramp by 2F per day to 86F. For a somewhat cleaner beer, ferment 10 degrees lower.

Tasting
notes
The yeast wasn't as funky as some saison yeast at those temps, but plenty adequate. No fusels, tangy nose with an almost malty-tasting flavor in the middle, and goes down with some yeasty funk. It is a little tough to tell where the amarillo hops ends and the yeast begins. It finished at 1.004 from 1.071 but it doesn't taste thin, at all.

If you want a real funky-ass "whoa" on the end of the thing, go with a more flavorful strain. I love how it turned out though, I'll be brewing again soon as it is my favorite beer that I've made. Haven't decided whether I want to try going up to 90F or not, it seemed about right where it ended up.
