Directions | Brewed as full volume BIAB. Add DME and brown sugar with 5 minutes left in boil. | ||||||||||||||||||||||||||||||||||||
Fermentation notes | Start ferment at 62F and allow to rise slowly through first 5 days to 68F. Hold at 68F for 10 days. Bring temperature up to 72F for 4 days. Cold crash at 40F for 6 days before priming and bottling. | ||||||||||||||||||||||||||||||||||||
Tasting notes | Malty, complex, and smooth, this beer is an excellent example of a Strong Scotch Ale. Malty aromas tickle the nose, from a modest off-white head above the dark ruby brown, moderately carbonated ale. The initial taste is complex in malt flavors of bread, toast, caramel, toffee, dried raisins and plums. It is full bodied in the mouth and finishes moderately crisply with just enough bitterness to balance out the latent sweetness of the malts. This ale leaves with a soft warming sensation from the high alcohol content which is ideal for those cold New England winter nights.
